Chipotle Chicken Chili

Ingredients

The base

  • 2 Tbsp olive oil
  • 1 yellow onion yellow onion
  • 2 cloves garlic
  • ¾ lb. chicken breast
  • 1 32oz. bottle V8 juice
  • 1 15oz. can diced tomato
  • 1 15oz. can kidney beans
  • 1 15oz. can black beans
  • 1 cup frozen corn kernels

The spices

  • ½ 4oz. can chipotle peppers in adobo sauce
  • 1 Tbsp chili powder
  • ½ Tbsp ground cumin
  • 1 tsp dried oregano
  • to taste salt

Instructions

  1. Dice the onion and mince the garlic, then cook them in olive oil over medium heat until soft.
  2. Add the chicken breast, V8 juice, diced tomatoes, drained beans, corn, chili powder, cumin, and oregano to the pot and stir to combine.
  3. Mince two chipotle peppers and add them along with two spoonfuls of adobo sauce to the pot.
  4. Bring the mixture to a boil, then reduce the heat to low and simmer for one hour with the lid on.
  5. After an hour, remove the chicken, shred it, and return it to the pot.
  6. Taste the chili and adjust with more chipotle peppers and salt as needed.
