Instructions
- Dice the onion and mince the garlic, then cook them in olive oil over medium heat until soft.
- Add the chicken breast, V8 juice, diced tomatoes, drained beans, corn, chili powder, cumin, and oregano to the pot and stir to combine.
- Mince two chipotle peppers and add them along with two spoonfuls of adobo sauce to the pot.
- Bring the mixture to a boil, then reduce the heat to low and simmer for one hour with the lid on.
- After an hour, remove the chicken, shred it, and return it to the pot.
- Taste the chili and adjust with more chipotle peppers and salt as needed.
