Ingredients

The chicken

  • 3 pounds bone-in skin-on chicken thighs

The marinade

  • 2 cups buttermilk
  • 2 teaspoons sea salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon fresh ground black pepper
  • ¼ teaspoon cayenne pepper

Instructions

  1. 1. Place the chicken in a shallow dish or large zip-top bag.
  2. 2. In a medium bowl, combine buttermilk, salt, smoked paprika, garlic powder, black pepper, and cayenne pepper.
  3. 3. Pour the marinade over the chicken and refrigerate for at least 4 hours or up to overnight.
  4. 4. Remove the chicken from the marinade and discard the marinade.
  5. 5. Select GRILL, HIGH and set the timer for 25 minutes.
  6. 6. When the grill is preheated, add the chicken in a single layer without overcrowding.
  7. 7. Cook the chicken, flipping halfway through, until it registers 160° F.
  8. 8. Remove the chicken from the grill and tent with foil. Allow to rest for 5 to 10 minutes before serving.
