Ingredients

The base

  • 2 tablespoons coconut oil
  • 5 cloves garlic
  • 2 teaspoons freshly grated ginger
  • ½ large white onion
  • 4 large carrots
  • ¼ teaspoon salt
  • 2 medium green bell peppers
  • 12 oz. snow peas
  • 15 oz. canned garbanzo beans
  • 1 cup instant white rice
  • 15 oz. canned unsweetened full-fat coconut milk
  • 1.5 cups vegetable broth
  • 2.5 tablespoons red curry paste
  • 2 teaspoons rice vinegar
  • 1 tablespoon lime juice

Optional ingredients

  • 1-2 teaspoons maple syrup
  • 1-2 teaspoons sriracha or chili garlic sauce
  • to taste fresh cilantro
  • to taste green onion

Instructions

  1. Heat coconut oil in a large skillet and sauté garlic, ginger, and onion for 1-2 minutes.
  2. Add carrots and salt, then sauté for another 2-3 minutes.
  3. Stir in bell peppers, snow peas, and garbanzo beans, sautéing for 2 more minutes.
  4. Add rice, coconut milk, vegetable broth, red curry paste, and rice vinegar, then bring to a boil.
  5. Cover and reduce heat to low, simmering for 15-20 minutes until rice is cooked.
  6. Squeeze in lime juice, adjust salt if needed, and add optional sweetener or spice if desired.
  7. Serve topped with fresh cilantro and green onion.
