Instructions
- Heat coconut oil in a large skillet and sauté garlic, ginger, and onion for 1-2 minutes.
- Add carrots and salt, then sauté for another 2-3 minutes.
- Stir in bell peppers, snow peas, and garbanzo beans, sautéing for 2 more minutes.
- Add rice, coconut milk, vegetable broth, red curry paste, and rice vinegar, then bring to a boil.
- Cover and reduce heat to low, simmering for 15-20 minutes until rice is cooked.
- Squeeze in lime juice, adjust salt if needed, and add optional sweetener or spice if desired.
- Serve topped with fresh cilantro and green onion.
