Instructions
- Heat a large pot over medium heat and add coconut oil, green chili, ginger, shallot, and garlic. Sauté for a few minutes.
- Add curry paste and sauté for a couple more minutes.
- Stir in coconut milk, turmeric, curry powder, salt, and pepper, and bring to a simmer.
- Add lentils, coconut aminos, and coconut sugar, and stir.
- Simmer gently for 15-20 minutes until lentils are tender, stirring occasionally.
- Adjust flavor with lemon juice, salt, or additional spices as needed.
- Serve over rice and garnish with cilantro and lemon or lime wedges.
