1-Pot Lentil Green Curry

Ingredients

The curry

  • 2 Tbsp coconut oil
  • 1 small green chili (optional)
  • 1 Tbsp minced fresh ginger
  • 1 medium shallot (thinly sliced)
  • 3 cloves garlic (minced)
  • 4 Tbsp Green Curry Paste
  • 2 ¼ cups light coconut milk
  • 1 tsp ground turmeric
  • 1 tsp curry powder
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 cup green lentils
  • 1 tsp coconut aminos or tamari
  • 1-2 Tbsp coconut sugar or maple syrup
  • 1 pinch cayenne pepper (optional)
  • 2 Tbsp fresh lemon juice

For serving (optional)

  • Cooked as needed white or brown rice or cauliflower rice
  • as needed fresh cilantro
  • as needed lemon or lime wedges

Instructions

  1. Heat a large pot over medium heat and add coconut oil, green chili, ginger, shallot, and garlic. Sauté for a few minutes.
  2. Add curry paste and sauté for a couple more minutes.
  3. Stir in coconut milk, turmeric, curry powder, salt, and pepper, and bring to a simmer.
  4. Add lentils, coconut aminos, and coconut sugar, and stir.
  5. Simmer gently for 15-20 minutes until lentils are tender, stirring occasionally.
  6. Adjust flavor with lemon juice, salt, or additional spices as needed.
  7. Serve over rice and garnish with cilantro and lemon or lime wedges.
