Vegan Curry with Green Lentils

Instructions
- Heat a large pot on medium heat and add coconut oil, heating for 30 seconds.
- Sauté ginger, onion, and garlic for about 5-6 minutes, being careful not to burn them.
- Add green curry paste, coconut milk, turmeric, curry powder, seasoning, lentils, soy sauce, and brown sugar to the pot.
- Bring the mixture to a boil, then cover and simmer for 30 minutes.
- Add lime juice and cook for a few more minutes.
- Serve with fresh cilantro and lime on rice or rice noodles.
