Vegan Curry with Green Lentils

Ingredients

The curry

  • 2 tbsp coconut oil
  • 2 tbsp minced ginger
  • 1 small onion, thinly sliced
  • 3-4 cloves garlic, pressed
  • 4 tbsp green curry paste
  • 2 cans whole fat coconut milk (400 mL each)
  • 2 tsp ground turmeric
  • 1 tbsp curry powder
  • 1 can green lentils, washed and drained (300 mL)
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar
  • ½ unit lime juice
  • to taste seasoning

To serve

  • to taste fresh cilantro
  • to taste lime

Instructions

  1. Heat a large pot on medium heat and add coconut oil, heating for 30 seconds.
  2. Sauté ginger, onion, and garlic for about 5-6 minutes, being careful not to burn them.
  3. Add green curry paste, coconut milk, turmeric, curry powder, seasoning, lentils, soy sauce, and brown sugar to the pot.
  4. Bring the mixture to a boil, then cover and simmer for 30 minutes.
  5. Add lime juice and cook for a few more minutes.
  6. Serve with fresh cilantro and lime on rice or rice noodles.
