Sandwich Rolls

Ingredients

  • 3 tbsp golden flaxmeal or chia seed meal
  • 3 tbsp applesauce
  • 2 tbsp water
  • 1 tbsp apple cider vinegar
  • ¾ tsp xanthan gum or guar gum
  • ¼ cup cashew milk or other plant-based milk
  • 1 tbsp honey
  • ¼ cup ghee or coconut oil
  • 1 tsp fresh chopped rosemary (optional)
  • ¼ tsp garlic powder
  • ½ cup coconut flour
  • ½ cup tapioca flour
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine flaxmeal or chia seed meal, applesauce, water, apple cider vinegar, xanthan gum, and cashew milk.
  3. Beat the mixture with an electric mixer.
  4. Add honey, ghee or coconut oil, rosemary, garlic powder, coconut flour, tapioca flour, baking soda, and baking powder in that order.
  5. Beat again until a dough forms, then shape it into a ball.
  6. Divide the dough into three portions, roll each into a ball, and flatten them into burger-sized patties.
  7. Place on unbleached parchment paper and bake for about 24 minutes.
