Ingredients

The dough

  • ¾ cup tapioca flour
  • ¼ cup coconut flour
  • ¼ cup almond flour
  • ¾ tsp baking soda
  • tsp baking powder
  • ¼ tsp sea salt
  • cup warm water
  • ¼ cup coconut oil or ghee, melted
  • 1 each flax egg (1 Tbsp. flax meal + 3 Tbsp. water)
  • 1 tsp apple cider vinegar

Toppings

  • to taste seeds for topping (chia, sesame, flax, etc.)

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine the tapioca flour, almond flour, coconut flour, baking soda, baking powder, and sea salt.
  3. Mix in the warm water and melted coconut oil or ghee.
  4. Add the flax egg and apple cider vinegar, mixing until a soft, slightly sticky dough forms.
  5. Let the dough set for a few minutes to absorb moisture.
  6. Form the dough into 8 small round or oval rolls and place them on a baking sheet.
  7. Brush the tops with melted ghee or coconut oil and sprinkle with seeds if desired.
  8. Bake for 13-16 minutes, checking after 13 minutes to avoid overbaking.
  9. Remove from the oven and cool for 10-15 minutes before serving.
