Paleo Cinnamon Rolls

Ingredients

Cinnamon Rolls

  • cups arrowroot starch
  • ½ cup coconut flour
  • 2 large eggs
  • ½ cup water
  • ½ cup melted coconut oil
  • 2 teaspoons vanilla extract
  • ¼ cup coconut sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Filling

  • cup coconut sugar
  • to taste ground cinnamon

Maple Cashew Glaze

  • ¾ cup cashews
  • 3 tablespoons pure maple syrup
  • 2 tablespoons melted coconut oil
  • ¼ cup water
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine all ingredients for the cinnamon rolls and mix well.
  3. Refrigerate the dough for 20 minutes to chill and thicken.
  4. On a large piece of parchment paper, press the dough into an 8" x 12" rectangle.
  5. Sprinkle coconut sugar and cinnamon over the dough, then roll it tightly using the parchment paper.
  6. Slice the rolled dough into 6-7 pieces and transfer to the lined baking dish, covering with foil.
  7. Bake for 25 minutes, then remove the foil and bake for an additional 5-10 minutes until firm.
  8. Allow to cool for 10 minutes before serving with the Maple Cashew Glaze.
  9. To make the glaze, blend all glaze ingredients until smooth.
