Cinnamon Rolls

Ingredients

Dry Ingredients

  • 1 cup coconut flour
  • 1 cup arrowroot flour
  • 2 tablespoons psyllium husk POWDER
  • 2 teaspoons baking soda

Wet Ingredients

  • cup water
  • 2 tablespoons apple cider vinegar
  • ½ cup honey
  • ½ cup melted coconut oil
  • ¼ teaspoon vanilla liquid stevia

Filling Ingredients

  • ½ cup melted coconut butter
  • 1 tablespoon cinnamon
  • ½ cup coconut sugar or maple sugar powder
  • to taste chopped walnuts (optional)

Coconut Butter Glaze

  • ¼ cup melted coconut cream concentrate
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • about 6 tablespoons water (as needed to thin)

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the dry ingredients in a bowl.
  3. In a separate bowl, combine the wet ingredients.
  4. Mix the dry ingredients into the wet ingredients using an electric mixer.
  5. Press the dough together and roll it out between two sheets of parchment paper to a thickness of ¼ to ½ inch.
  6. Mix the cinnamon and sugar together, then spread it over the rolled dough.
  7. Drizzle the melted coconut butter over the cinnamon-sugar mixture.
  8. Roll the dough tightly and slice it into 8 rolls.
  9. Arrange the rolls in a lightly greased dish.
  10. Bake for about 30 minutes or until the tops are golden.
  11. Allow to cool to room temperature before serving.
