Instructions
- Grease a baking dish.
- Mix warm water, yeast, and sugar in a small bowl and let it sit until foamy.
- Combine coconut oil, almond milk, sugar, and salt in a medium bowl, then stir in the yeast mixture.
- Add flour to the wet ingredients and mix until combined, then knead until smooth.
- Place the dough in a greased bowl, cover, and let it rise until doubled in size.
- Prepare the filling by mixing brown sugar and cinnamon in a small bowl.
- Roll out the dough into a rectangle, brush with melted coconut oil, and sprinkle with the cinnamon sugar.
- Roll the dough tightly and slice into rolls, placing them cut-side up in the baking dish.
- Cover and let the rolls rise again.
- Preheat the oven and prepare the glaze by whisking powdered sugar, almond milk, and vanilla.
- Bake the rolls until golden, cool slightly, and drizzle with glaze before serving.
