Cinnamon Rolls

Ingredients

Dough

  • ¼ cup warm water
  • 1 Tbsp active dry yeast
  • ¾ cup buttermilk
  • 2 large eggs
  • ½ cup granulated sugar
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 6 Tbsp unsalted butter
  • 3½ - 4 cups bread flour

Cinnamon Filling

  • 6 Tbsp unsalted butter
  • 1 cup packed light brown sugar
  • 2 Tbsp Saigon cinnamon

Cream Cheese Icing

  • ¼ cup unsalted butter
  • 3 oz cream cheese
  • ½ tsp vanilla extract
  • cups powdered sugar

Instructions

  1. Proof the yeast by mixing warm water, yeast, and a little sugar, then let it rest until bubbly.
  2. Mix in buttermilk, eggs, sugar, salt, vanilla, and melted butter, then combine well.
  3. Gradually add flour, kneading until the dough is smooth and elastic.
  4. Let the dough rise in a warm place until doubled in size, about 1½ hours.
  5. Prepare a baking sheet by buttering it and lining it with parchment paper.
  6. Roll the dough out into a large rectangle, then spread with butter and sprinkle with the cinnamon sugar mixture.
  7. Roll the dough tightly into a log and cut into 12 equal portions.
  8. Arrange the rolls on the baking sheet and let them rise again until doubled, about 1½ hours.
  9. Preheat the oven to 375°F during the last 20 minutes of rising.
  10. Bake the rolls until cooked through, about 18-22 minutes.
  11. While baking, prepare the cream cheese icing by mixing butter, cream cheese, vanilla, and powdered sugar until fluffy.
  12. Spread the icing over the warm rolls before serving.
