Healthy Cinnamon Rolls

Ingredients

Dough

  • 2 cups unsweetened almond milk
  • ½ cup melted butter or coconut oil
  • 0.25 oz instant yeast
  • ¼ cup coconut sugar
  • 2 cups white whole wheat flour
  • 1½ – 2 cups all purpose flour
  • ½ tsp salt

Inside

  • cup coconut sugar
  • 2 tbsp cinnamon
  • ¼ cup softened butter

Topping

  • 2 tbsp melted butter

Frosting

  • 1 8oz block cream cheese, softened
  • ¼ cup butter, softened
  • 1 cup powdered sugar
  • tsp salt
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 dish.
  2. Heat the almond milk and butter until melted and reach 110°F.
  3. Sprinkle the yeast on top of the warm milk mixture and let it sit for ten minutes.
  4. Mix the flours and salt in another bowl.
  5. Whisk in the coconut sugar into the milk mixture after ten minutes.
  6. Add the wet ingredients into the flour and stir until well combined.
  7. Cover with plastic wrap and let rise in a slightly warm oven for 45 minutes.
  8. Prepare the cinnamon sugar mixture by mixing coconut sugar and cinnamon together.
  9. Flour a surface and dump the dough onto it; form it into a large rectangle.
  10. Spread softened butter on top of the dough and sprinkle with the cinnamon sugar mixture.
  11. Roll the dough tightly and cut into 12 rolls.
  12. Place the rolls in the greased baking dish and brush with melted butter.
  13. Preheat the oven again to 350°F with the rolls on top.
  14. Bake for 25-30 minutes until slightly golden.
  15. Prepare the frosting by blending all frosting ingredients until smooth.
  16. Frost the cinnamon rolls while still warm.
