Ingredients

Wet Ingredients

  • ¾ cup unsweetened plain almond milk
  • 2 Tbsp organic cane sugar
  • 1 Tbsp vegan butter
  • 1 packet active dry yeast

Dry Ingredients

  • 2 cups DIY gluten-free flour blend
  • ¾ cup almond flour
  • 2 Tbsp cane sugar
  • tsp baking powder
  • ½ tsp sea salt
  • 4 Tbsp cold vegan butter

Filling

  • 3 Tbsp melted vegan butter
  • cup organic brown sugar
  • 1 Tbsp ground cinnamon

Frosting (optional)

  • 1 recipe Vegan Cream Cheese Frosting
  • 1 recipe Simple Powdered Sugar Glaze

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare a baking dish with vegan butter.
  2. Warm the almond milk to about 110°F (43°C) and mix in the vegan butter and sugar, then add the yeast and let it proof for 10 minutes.
  3. In a separate bowl, combine the gluten-free flour blend, almond flour, cane sugar, baking powder, and sea salt.
  4. Cut in the cold vegan butter until the mixture resembles wet sand.
  5. Gradually add the almond milk-yeast mixture to the dry ingredients until a moist dough forms.
  6. Prepare a cutting board with plastic wrap and flour, then roll out the dough into a rectangle.
  7. Spread melted vegan butter over the dough, sprinkle with brown sugar and cinnamon, and roll it up tightly.
  8. Cut the rolled dough into 7-8 even pieces and place them in the prepared baking dish.
  9. Cover and let the rolls rise in a warm place for about 30 minutes.
  10. Bake for 30-35 minutes until golden brown, then let cool for at least 20 minutes before frosting.
