Grilled Peaches and Coconut Ice Cream

Ingredients

The peaches

  • 5 pieces peaches, pitted and halved

The oil

  • ½ tablespoon coconut oil, algae oil, or avocado oil

The ice cream

  • 1 container Coconut Bliss Infinite Coconut Vegan Ice Cream

Optional toppings

  • to taste cinnamon
  • to taste maple syrup

Instructions

  1. Preheat the grill or grill pan to medium-high heat.
  2. Brush the peach halves with oil.
  3. Place the peach halves cut side down on the grill and cover.
  4. Grill for 4-6 minutes until the peaches soften and grill marks appear.
  5. Check to ensure they don’t burn, rotating them for crisscross marks if desired.
  6. Remove the peaches from the grill onto a plate.
  7. Serve two peach halves in a bowl, topped with a scoop of ice cream and sprinkled with cinnamon.
  8. Optionally, drizzle with maple syrup before serving.
