Ingredients

Coconut Cream

  • 1 can full fat coconut milk
  • 1-2 tablespoons coconut sugar
  • to taste mint leaves (for garnish)

Grilled Stone Fruit

  • 3-5 peaches (pitted and halved)
  • 7-8 plums (pitted and halved)
  • 1 tablespoon coconut oil
  • to sprinkle cinnamon

Instructions

  1. Prepare the coconut cream by flipping the coconut milk can upside down, opening it, and separating the liquid from the thick cream.
  2. Whip the thick cream in a cold mixing bowl until it's thick and creamy, adding coconut sugar to taste.
  3. Heat the grill to medium-high.
  4. Brush the peach and plum halves with coconut oil.
  5. Place the fruit halves on the grill and cook for 4-6 minutes until softened and marked.
  6. Remove the grilled fruit and serve with a dollop of coconut cream, sprinkled with cinnamon.
