Instructions
- Preheat the oven to 350°F.
- Brown the turkey sausage links in a skillet over medium-high heat until fully cooked, then cut into ½ inch pieces.
- In a large bowl, whisk together egg whites, whole eggs, skim milk, salt, and pepper, then stir in the chopped spinach.
- Grease 6 muffin tin cups or line them with paper liners.
- Pour the egg mixture evenly into the muffin cups.
- Distribute the sausage pieces and cheese evenly among the muffin cups.
- Bake for 20 minutes or until the muffins are firm in the center.
- Remove from the oven and use a butter knife to gently loosen the edges of each muffin before serving warm.
