Ingredients

  • 5 count egg whites
  • 2 count whole eggs
  • ¼ cup skim milk
  • ¼ cup fresh chopped spinach
  • ¼ cup shredded sharp Cheddar cheese
  • 3 links lean breakfast turkey sausage
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Brown the turkey sausage links in a skillet over medium-high heat until fully cooked, then cut into ½ inch pieces.
  3. In a large bowl, whisk together egg whites, whole eggs, skim milk, salt, and pepper, then stir in the chopped spinach.
  4. Grease 6 muffin tin cups or line them with paper liners.
  5. Pour the egg mixture evenly into the muffin cups.
  6. Distribute the sausage pieces and cheese evenly among the muffin cups.
  7. Bake for 20 minutes or until the muffins are firm in the center.
  8. Remove from the oven and use a butter knife to gently loosen the edges of each muffin before serving warm.
