Sausage Hash Brown Egg Muffins

Instructions
- Preheat the oven to 350℉ and grease a muffin pan.
- Brown the sausage in a skillet, then drain and set aside.
- In the same skillet, add cooking fat and cook the hash browns until lightly browned, then divide among the muffin wells.
- Sauté the peppers and onions in the skillet until tender.
- Layer the sausage over the hash browns and then add the sautéed veggies.
- Whisk the eggs with salt and pepper, then pour over the muffin mixture.
- Bake for 18-22 minutes until the egg muffins are firm and cooked through, then let them set for 5-10 minutes before serving.
