Sausage Hash Brown Egg Muffins

Ingredients

  • 2 ½ cups frozen hash browns
  • ¾ cup diced green pepper
  • ¾ cup diced sweet bell pepper
  • ½ cup diced yellow onion
  • ½ lb. ground pork sausage
  • 8 whole eggs
  • ½ tsp salt
  • ¼ tsp pepper
  • to taste cooking fat of choice

Instructions

  1. Preheat the oven to 350℉ and grease a muffin pan.
  2. Brown the sausage in a skillet, then drain and set aside.
  3. In the same skillet, add cooking fat and cook the hash browns until lightly browned, then divide among the muffin wells.
  4. Sauté the peppers and onions in the skillet until tender.
  5. Layer the sausage over the hash browns and then add the sautéed veggies.
  6. Whisk the eggs with salt and pepper, then pour over the muffin mixture.
  7. Bake for 18-22 minutes until the egg muffins are firm and cooked through, then let them set for 5-10 minutes before serving.
