Ingredients

The base

  • 2 medium red potatoes
  • 1 teaspoon garlic powder
  • teaspoon salt
  • teaspoon pepper

The filling

  • 12 links fully-cooked breakfast sausage
  • 8 large eggs
  • ¼ cup milk
  • cup shredded Colby jack cheese

Instructions

  1. Preheat the oven to 350°F and prepare a 12-cup nonstick muffin tin with cooking spray.
  2. Shred the red potatoes and squeeze out excess moisture, then season with garlic powder, salt, and pepper.
  3. Distribute the seasoned shredded potatoes evenly among the muffin cups.
  4. Chop the breakfast sausage and add it on top of the shredded potatoes.
  5. In a bowl, whisk together the eggs and milk, then pour the mixture over the sausage and potatoes, filling each cup about ¾ full.
  6. Season the tops with salt and pepper, then sprinkle cheese over each cup.
  7. Bake in the oven for 18-22 minutes until set.
