Instructions
- Preheat the oven to 350°F and prepare a 12-cup nonstick muffin tin with cooking spray.
- Shred the red potatoes and squeeze out excess moisture, then season with garlic powder, salt, and pepper.
- Distribute the seasoned shredded potatoes evenly among the muffin cups.
- Chop the breakfast sausage and add it on top of the shredded potatoes.
- In a bowl, whisk together the eggs and milk, then pour the mixture over the sausage and potatoes, filling each cup about ¾ full.
- Season the tops with salt and pepper, then sprinkle cheese over each cup.
- Bake in the oven for 18-22 minutes until set.
