Instructions
- Preheat the oven to 375°F and prepare a muffin tin with cooking spray.
- In a large bowl, mix shredded potatoes with olive oil, salt, and pepper.
- Press the potato mixture into the muffin cups to form a cup shape and bake for 35 minutes.
- While baking, cook onions in a skillet until softened, then add ground beef and seasoning, cooking until browned.
- Combine the cooked meat mixture with ketchup, mustard, and tomatoes.
- Once the potato cups are baked, fill them with the meat mixture and top with cheddar cheese.
- Return to the oven for an additional 10-15 minutes until cheese is melted and potatoes are golden brown.
- Let cool for 5 minutes, then remove from the tin and serve.
