Cheeseburger Hash Brown Cups

Ingredients

The cups

  • 20 oz shredded hash brown potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • to taste black pepper
  • ¼ cup diced onion

The filling

  • 1 lb 95% lean ground beef
  • 1 tablespoon hamburger seasoning
  • 2 tablespoons ketchup
  • 2 teaspoons yellow mustard
  • 6 grape tomatoes, chopped
  • ½ cup shredded 2% cheddar cheese

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with cooking spray.
  2. In a large bowl, mix shredded potatoes with olive oil, salt, and pepper.
  3. Press the potato mixture into the muffin cups to form a cup shape and bake for 35 minutes.
  4. While baking, cook onions in a skillet until softened, then add ground beef and seasoning, cooking until browned.
  5. Combine the cooked meat mixture with ketchup, mustard, and tomatoes.
  6. Once the potato cups are baked, fill them with the meat mixture and top with cheddar cheese.
  7. Return to the oven for an additional 10-15 minutes until cheese is melted and potatoes are golden brown.
  8. Let cool for 5 minutes, then remove from the tin and serve.
