Ingredients

The hashbrowns

  • 1 Tbsp. unsalted butter
  • 1 Tbsp. minced garlic
  • ½ cup finely chopped yellow onion
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. seasoned salt
  • 2 cups shredded hashbrowns (frozen)

The cheese sauce

  • 1 Tbsp. butter
  • 1 Tbsp. flour
  • cup milk
  • ¼ tsp. dry mustard
  • ½ cup habanero cheese (or any cheese of your preference)
  • to taste salt and pepper

The additional ingredients

  • 4 strips thick cut bacon (cooked until crispy and chopped)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Melt butter in a skillet over medium heat, then add garlic and onion, cooking until fragrant.
  3. Add the shredded hash browns to the skillet and mix with the butter, garlic, and onion.
  4. Season the hash browns with salt, pepper, and seasoned salt, then cook as per package instructions.
  5. For the cheese sauce, melt butter in a saucepan over medium heat, then whisk in flour until combined.
  6. Gradually add milk while whisking, bringing the mixture to a quick boil before reducing to low heat.
  7. Continue whisking until the mixture thickens, then add dry mustard and mix thoroughly.
  8. Slowly incorporate the cheese into the sauce, whisking until combined.
  9. Combine the cooked hash browns in a casserole dish with the cheese sauce and chopped bacon.
  10. Mix everything together and bake for 10 minutes at 350 degrees.
