Ingredients

The base

  • 1 pound frozen hash browns
  • 8-10 slices cooked and crumbled bacon
  • 1 ½ cups sour cream or plain Greek yogurt
  • 4 oz cream cheese
  • ½ cup diced onions
  • ½ cup diced bell peppers
  • ½ teaspoon garlic powder
  • ½ teaspoon Creole seasoning
  • to taste salt and pepper

The cheese

  • 2 cups grated cheese (cheddar and mozzarella)

Instructions

  1. Combine hash browns, bacon, sour cream or Greek yogurt, cream cheese, onions, bell peppers, and spices in the slow cooker.
  2. Cook on High for 2-3 hours or Low for 4-6 hours until the potatoes are soft.
  3. Stir the mixture and sprinkle the grated cheese on top.
  4. Cover and cook on High until the cheese melts and the dish is creamy, about 30 minutes.
  5. Let cool before serving.
