Ingredients

  • 12 large eggs
  • ½ cup salsa
  • 1 cup baby spinach leaves, chopped
  • ¼ cup green onions, chopped
  • ½ tsp cumin
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ½ cup shredded cheese (Mexican blend)

Instructions

  1. Preheat the oven to 350°F and spray a 12-cup muffin tin with non-stick spray.
  2. In a large bowl, whisk together the eggs, salsa, chopped spinach, green onions, cheese, and seasonings until well combined.
  3. Pour the egg mixture into each muffin cup about ¾ full and bake for 20 to 25 minutes until the eggs are set and edges are slightly browned.
  4. Remove from the oven and let cool for about 5 minutes before enjoying.
