Instructions
- Preheat the oven to 350°F and spray a 12-cup muffin tin with non-stick spray.
- In a large bowl, whisk together the eggs, salsa, chopped spinach, green onions, cheese, and seasonings until well combined.
- Pour the egg mixture into each muffin cup about ¾ full and bake for 20 to 25 minutes until the eggs are set and edges are slightly browned.
- Remove from the oven and let cool for about 5 minutes before enjoying.
