Cheesy Egg Muffins

Ingredients

  • 4 large eggs
  • 2 tablespoons full fat Greek yogurt
  • to taste Kosher salt
  • 3 tablespoons coconut flour
  • ¼ teaspoon baking powder
  • ½ cup shredded Cheddar cheese
  • to taste freshly ground black pepper

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. In a bowl, whisk together the eggs, yogurt, and a dash of salt until blended.
  3. 3. Add the coconut flour and baking powder, mixing until smooth.
  4. 4. Stir in the cheese and black pepper.
  5. 5. Divide the batter into silicone cupcake liners or paper liners greased with coconut oil.
  6. 6. Bake for approximately 20 minutes, rotating halfway through, until the tops spring back when poked.
  7. 7. Allow the muffins to cool on a rack for about 10 minutes before serving.
