Ingredients

The base

  • 10 large eggs
  • ¼ cup milk or plain Greek yogurt

The vegetables

  • 1 tablespoon olive oil
  • 1 small head broccoli, chopped into bite-size florets

The seasonings

  • 1 ½ teaspoons coarse salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried mustard powder

The cheese

  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat the oven to 350 degrees.
  2. Heat olive oil in a skillet and sauté the broccoli for 4-5 minutes until soft.
  3. In a mixing bowl, whisk together the eggs, milk, salt, onion powder, garlic powder, black pepper, and mustard powder.
  4. Fold in the sautéed broccoli and half of the cheddar cheese.
  5. Coat a muffin tin with cooking spray and distribute the egg mixture evenly into each cup.
  6. Sprinkle the remaining cheddar cheese on top.
  7. Bake for 18-22 minutes until the eggs are set.
  8. Let the muffins cool slightly before removing them from the tin.
