Quinoa Egg Muffins

Instructions
- Preheat the oven to 350°F and grease muffin pans.
- Spoon 1 teaspoon of quinoa into the bottom of each muffin cup.
- Mix together the eggs and milk until combined.
- Chop the broccoli and add it to the egg mixture.
- Pour the broccoli and egg mixture into the muffin pans.
- Slice the red pepper and top each muffin with it and crumbled feta cheese.
- Bake for 30 minutes until the egg is cooked through.
- Cool in the pan and store in a sealed container if not serving immediately.
