Quinoa Egg Muffins

Ingredients

  • ¼ cup quinoa
  • 7 pieces eggs
  • ½ cup milk
  • 2 heads broccoli
  • piece red pepper
  • 2 tablespoons crumbled feta cheese
  • to taste salt
  • to taste pepper
  • as needed butter or non-stick cooking spray

Instructions

  1. Preheat the oven to 350°F and grease muffin pans.
  2. Spoon 1 teaspoon of quinoa into the bottom of each muffin cup.
  3. Mix together the eggs and milk until combined.
  4. Chop the broccoli and add it to the egg mixture.
  5. Pour the broccoli and egg mixture into the muffin pans.
  6. Slice the red pepper and top each muffin with it and crumbled feta cheese.
  7. Bake for 30 minutes until the egg is cooked through.
  8. Cool in the pan and store in a sealed container if not serving immediately.
