Instructions
- Preheat the oven to 350°F.
- Cook quinoa according to package directions and let it cool for about 5 minutes.
- In a medium bowl, combine quinoa, flours, baking powder, salt, and chia seeds.
- In a smaller bowl, whisk together almond milk, egg, yogurt, honey, and vanilla extract.
- Slowly add the wet mixture to the dry quinoa mixture and stir until just combined.
- Divide the mixture evenly among greased muffin tins.
- Bake for about 25 to 30 minutes, until a toothpick inserted in the center comes out clean.
- Allow to cool for about 5 minutes before enjoying.
