Chia Seed Quinoa Muffins

Ingredients

  • 2 cups cooked quinoa
  • ¼ cup plain Greek yogurt
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • tsp baking powder
  • 1 tsp salt
  • 2 Tbsp chia seeds
  • ¾ cup unsweetened almond milk
  • 1 large egg
  • cup honey
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Cook quinoa according to package directions and let it cool for about 5 minutes.
  3. In a medium bowl, combine quinoa, flours, baking powder, salt, and chia seeds.
  4. In a smaller bowl, whisk together almond milk, egg, yogurt, honey, and vanilla extract.
  5. Slowly add the wet mixture to the dry quinoa mixture and stir until just combined.
  6. Divide the mixture evenly among greased muffin tins.
  7. Bake for about 25 to 30 minutes, until a toothpick inserted in the center comes out clean.
  8. Allow to cool for about 5 minutes before enjoying.
