Ingredients

Dry Ingredients

  • 2 cups white whole wheat flour
  • 3 tbsp chia seeds
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • ½ cup honey
  • ½ cup plain Greek yogurt
  • 2 large eggs
  • ½ cup milk
  • cup avocado oil
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • ¼ cup lemon juice

Glaze (Optional)

  • ½ cup powdered sugar
  • 1 tbsp lemon juice
  • 1-2 tsp milk

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Mix the dry ingredients in a large bowl.
  3. In a separate bowl, whisk the wet ingredients together.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Prepare a muffin tin with liners or grease it.
  6. Scoop the batter into the muffin cups, filling each about ⅔ full.
  7. Bake for 15-18 minutes until a toothpick comes out clean.
  8. Cool the muffins before removing them from the tin.
  9. For the glaze, whisk powdered sugar, lemon juice, and milk until smooth.
  10. Drizzle the glaze over the cooled muffins and serve.
