Lemon Muffins with Chia Seeds and Honey Glaze

Ingredients

The muffins

  • 2 large lemons
  • ½ cup sugar
  • cups all purpose flour
  • teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons vanilla
  • 2 large eggs
  • 3 tablespoons oil
  • ½ cup thick plain Greek yogurt
  • ¼ cup milk or cream
  • 3 tablespoons chia seeds
  • 2 tablespoons poppy seeds
  • 2 tablespoons honey

The glaze

  • 1 cup powdered sugar
  • 1 tablespoon honey
  • 2 tablespoons milk or cream
  • 1 tablespoon salted butter

Instructions

  1. Preheat the oven to 375°F.
  2. Mix lemon zest and sugar in a bowl, rubbing together to release flavor.
  3. Add flour, baking soda, and salt to the mixture and stir.
  4. In another bowl, whisk lemon juice, vanilla, eggs, oil, yogurt, milk, chia seeds, poppy seeds, and honey.
  5. Combine wet and dry ingredients, stirring until just mixed.
  6. Pour batter into greased muffin tins for 8 large muffins.
  7. Bake for 12-14 minutes until tops spring back when touched.
  8. For the glaze, whisk powdered sugar, honey, and milk until smooth.
  9. Melt butter in a pan, add glaze mixture, and stir until bubbling.
  10. Glaze muffins immediately by dipping or spooning glaze over them.
