Instructions
- Preheat the oven to 375°F.
- Mix lemon zest and sugar in a bowl, rubbing together to release flavor.
- Add flour, baking soda, and salt to the mixture and stir.
- In another bowl, whisk lemon juice, vanilla, eggs, oil, yogurt, milk, chia seeds, poppy seeds, and honey.
- Combine wet and dry ingredients, stirring until just mixed.
- Pour batter into greased muffin tins for 8 large muffins.
- Bake for 12-14 minutes until tops spring back when touched.
- For the glaze, whisk powdered sugar, honey, and milk until smooth.
- Melt butter in a pan, add glaze mixture, and stir until bubbling.
- Glaze muffins immediately by dipping or spooning glaze over them.
