Ingredients

Wet Ingredients

  • 6 large eggs
  • ¼ cup coconut oil
  • ½ tsp liquid stevia
  • 2 tsp almond extract
  • 2 tbsp honey or agave

Dry Ingredients

  • 6 tbsp almond butter
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • 4 tbsp coconut flour
  • 1 cup quinoa flakes
  • 2 tsp baking powder
  • 2 tsp baking soda

Add-ins

  • 1 cup chopped or slivered nuts

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, combine the eggs, coconut oil, liquid stevia, almond extract, and honey/agave.
  3. Beat the mixture with an electric mixer.
  4. Add the almond butter, sea salt, cinnamon, coconut flour, quinoa flakes, baking powder, and baking soda to the mixture.
  5. Beat again until well combined.
  6. Stir in the chopped or slivered nuts.
  7. Fill unbleached paper muffin cups about ¾ full.
  8. Bake for 15 minutes.
