Instructions
- Beat the egg, egg whites, milk, salt, and pepper in a small bowl.
- Heat a medium non-stick skillet on medium and spray it lightly with oil.
- Once the skillet is warm, add the egg mixture and rotate the pan to cover the bottom.
- Reduce the heat to low and lay the cheese in the center of the eggs, topping it with broccoli.
- When the eggs are set, fold the sides over to create the omelet.
