Broccoli and Cheese Omelet

Ingredients

The omelet

  • 1 egg egg
  • 2 egg whites egg whites
  • 1 tbsp skim milk
  • to taste salt
  • to taste fresh pepper
  • as needed oil spray

The filling

  • ½ cup broccoli, cooked
  • 1 slice Swiss cheese, WW reduced fat

Instructions

  1. Beat the egg, egg whites, milk, salt, and pepper in a small bowl.
  2. Heat a medium non-stick skillet on medium and spray it lightly with oil.
  3. Once the skillet is warm, add the egg mixture and rotate the pan to cover the bottom.
  4. Reduce the heat to low and lay the cheese in the center of the eggs, topping it with broccoli.
  5. When the eggs are set, fold the sides over to create the omelet.
