Cheesy Spinach-Artichoke Omelet

Ingredients

The omelet

  • 1 whole egg
  • 2 whites egg whites
  • 1 tablespoon water or milk
  • to taste kosher salt
  • to taste fresh cracked black pepper
  • a pinch garlic powder

The filling

  • 1 wedge Laughing Cow cheese
  • ½ cup chopped fresh spinach leaves
  • 3 marinated artichoke hearts, diced
  • 1 tablespoon fresh shredded Parmesan cheese

Instructions

  1. Heat an 8-inch nonstick frying pan to medium heat.
  2. Whisk together the egg, egg whites, and water, adding salt, pepper, and garlic powder.
  3. Spray the pan with nonstick spray or brush with olive oil, then add the egg mixture and swirl to coat the bottom.
  4. Use a rubber spatula to scrape the edges inward, allowing uncooked eggs to flow to the bottom.
  5. Cover the pan with a lid and reduce heat to low, cooking until the top is just barely set.
  6. Drop dollops of Laughing Cow cheese on top, then add spinach, artichokes, and Parmesan cheese.
  7. Sprinkle with additional salt and pepper, then slide the omelet onto a plate.
