Instructions
- Heat an 8-inch nonstick frying pan to medium heat.
- Whisk together the egg, egg whites, and water, adding salt, pepper, and garlic powder.
- Spray the pan with nonstick spray or brush with olive oil, then add the egg mixture and swirl to coat the bottom.
- Use a rubber spatula to scrape the edges inward, allowing uncooked eggs to flow to the bottom.
- Cover the pan with a lid and reduce heat to low, cooking until the top is just barely set.
- Drop dollops of Laughing Cow cheese on top, then add spinach, artichokes, and Parmesan cheese.
- Sprinkle with additional salt and pepper, then slide the omelet onto a plate.
