Ingredients

The base

  • 5 cups fresh broccoli florets
  • 1 tsp garlic powder
  • 1 tbsp curry powder
  • 12 large eggs
  • 12 large egg whites
  • ¼ cup 2% milk
  • salt and pepper to taste

The cheese

  • ¾ cup grated part skim mozzarella
  • ¾ cup grated low fat sharp cheddar

Instructions

  1. 1. Preheat the oven to 375ºF and spray a 10x14-inch casserole dish with cooking spray.
  2. 2. Steam the broccoli florets for two minutes until just tender, then toss with garlic powder, salt, and curry powder.
  3. 3. In a large bowl, mix together the eggs, egg whites, milk, salt, and pepper until well combined.
  4. 4. Layer the seasoned broccoli in the casserole dish and sprinkle the cheese over it.
  5. 5. Pour the egg mixture over the broccoli and cheese, ensuring even distribution.
  6. 6. Bake for about 30 minutes or until the top is slightly browned and the eggs are cooked through.
  7. 7. Allow to cool for 10 minutes before cutting into squares and serving.
