Three Cheese Broccoli Brunch Bake

Instructions
- Preheat the oven to 350°F and mist a 2-quart baking dish with cooking spray.
- Melt the butter in a skillet over medium heat, add mushrooms, and cook until softened.
- Microwave the broccoli florets covered with a damp paper towel for 2 minutes until bright green.
- In a large mixing bowl, combine eggs, cream cheese, milk, and Bisquick, mixing until well combined.
- Stir in the cheddar cheese, cottage cheese, salt, and pepper, then add the cooked mushrooms and broccoli.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Bake uncovered for 55-65 minutes until the eggs are set and a toothpick comes out clean.
- Allow to cool for 10 minutes before cutting into 6 servings.
