Ingredients

The base

  • 5 large eggs
  • 1 cup cottage cheese (4% milkfat)
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper

The filling

  • 2 cups diced broccoli
  • 1 cup shredded cheddar cheese
  • 1 tablespoon freshly chopped chives

The cooking fat

  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350ºF and grease a 9-inch pie dish.
  2. In a skillet, heat olive oil and sauté the broccoli until tender, about 8 to 10 minutes.
  3. Spread the cooked broccoli in the pie dish and top with chives and cheddar cheese.
  4. Blend the eggs, cottage cheese, salt, and pepper until smooth.
  5. Pour the egg mixture over the broccoli and cheese, pressing down any sticking pieces.
  6. Bake for 35 minutes or until the center is set and the top is golden brown.
  7. Let cool for 10 to 15 minutes before slicing and serving.
