Ingredients

Vegetables

  • 2½ – 3 cups broccoli florets
  • 2½ – 3 cups cauliflower florets

Seasoning

  • ½ tsp sea salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Eggs and Dairy

  • 6 whole eggs
  • 6 whites egg whites
  • cups 2% Greek yogurt
  • ¼ cup scallions, chopped
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch pie plate.
  2. Bring water to a boil in a pot and steam the broccoli and cauliflower for 6 minutes until tender.
  3. Transfer the steamed vegetables to a bowl and season with salt, garlic powder, and black pepper.
  4. In a separate bowl, whisk together the eggs, egg whites, and Greek yogurt until well combined.
  5. Add the seasoned vegetables to the pie plate and sprinkle with scallions and cheese.
  6. Pour the egg mixture over the vegetables and cheese.
  7. Bake for 45 minutes until set and lightly browned on top.
  8. Cool, slice, and enjoy.
