Crustless Quiche with Broccoli and Cauliflower

Instructions
- Preheat the oven to 350°F and grease a 9-inch pie plate.
- Bring water to a boil in a pot and steam the broccoli and cauliflower for 6 minutes until tender.
- Transfer the steamed vegetables to a bowl and season with salt, garlic powder, and black pepper.
- In a separate bowl, whisk together the eggs, egg whites, and Greek yogurt until well combined.
- Add the seasoned vegetables to the pie plate and sprinkle with scallions and cheese.
- Pour the egg mixture over the vegetables and cheese.
- Bake for 45 minutes until set and lightly browned on top.
- Cool, slice, and enjoy.
