Ingredients

The crust

  • 1 pie crust pie crust

The filling

  • 1 tablespoon extra-virgin olive oil
  • 2 cups finely chopped broccoli florets
  • 1 small bunch green onions
  • 5 large eggs
  • ¾ cup milk
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • teaspoon cayenne pepper
  • 2 ounces shredded extra sharp cheddar cheese
  • 1 ounce finely grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F and roll the pie dough into an 11-inch circle.
  2. Transfer the dough to a 9-inch pie dish and flute the edges, then blind bake for 10 minutes.
  3. Remove the foil and weights, and bake for an additional 3 minutes until light golden.
  4. Reduce the oven temperature to 350°F.
  5. In a skillet, heat olive oil and cook the chopped broccoli for 4 minutes, then add green onions and cook for another 1-2 minutes.
  6. In a mixing bowl, whisk together eggs, milk, salt, black pepper, and cayenne.
  7. Scatter the broccoli mixture in the crust, sprinkle with cheddar and half of the parmesan, then pour the egg mixture over it.
  8. Bake for 40 to 50 minutes until set, let rest for 5 to 10 minutes, then slice and serve.
