Keto Quiche (Broccoli Cheddar)

Ingredients

The crust

  • 1 recipe Almond flour pie crust

The filling

  • 1 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 2 cups Broccoli (cut into small florets)
  • ¼ cup Water
  • 5 large Eggs
  • cup Heavy cream
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • 1 cup Cheddar cheese (shredded)

Instructions

  1. Bake the almond flour pie crust and cool for at least 15 minutes.
  2. Sauté the broccoli and garlic, then let cool for about 10 minutes.
  3. In a bowl, whisk together eggs, cream, salt, and pepper, then stir in the shredded cheese.
  4. Arrange the broccoli in the pie crust and pour the egg mixture over it, spreading the cheese evenly.
  5. Cover the edges of the crust with foil or a pie crust shield.
  6. Bake for 30-35 minutes until set, then cool for 10-20 minutes before slicing.
