Ingredients

  • 6 large eggs
  • 1 ¼ cup heavy cream
  • ¼ cup almond milk (or water)
  • ¼ cup raw onions, finely chopped
  • 6 oz bite-sized broccoli florets (steamed until crisp-tender)
  • 2 cups shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • ¼ teaspoon white pepper
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F and position the oven rack in the middle.
  2. Spray a 9-10 inch quiche plate with baking spray.
  3. Cook and crumble the bacon, and steam the broccoli.
  4. Finely dice the onions.
  5. Layer the quiche ingredients starting with ¼ of the cheese, followed by ⅓ each of the broccoli, onion, and bacon. Repeat the layers, finishing with cheese.
  6. In a medium bowl, beat the eggs, heavy cream, almond milk (or water), salt, and pepper until frothy.
  7. Gently pour the custard over the layered ingredients.
  8. Bake for 30-40 minutes or until the middle is just set and the top is browned.
  9. Serve at room temperature or warmed.
