Bacon Broccoli Quiche

Ingredients

  • 4 slices center cut bacon
  • 1 9 inch frozen pie crust
  • 3 ounces 50% reduced fat sharp cheddar cheese, shredded
  • 1 cup broccoli florets
  • 4 large eggs
  • ¾ cup skim milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with aluminum foil.
  2. Cook the bacon according to package directions, drain on paper towels, and chop or crumble.
  3. Place the frozen pie crust on the baking sheet and cover the edges with aluminum foil.
  4. Sprinkle cheese on the bottom of the pie crust and top with bacon pieces.
  5. Microwave the broccoli florets covered with a damp paper towel for about 90 seconds, then spread over the cheese and bacon.
  6. Whisk together eggs, milk, salt, and pepper in a bowl, then pour over the ingredients in the pie crust.
  7. Bake for 15 minutes at 425°F, then reduce the heat to 350°F, remove the foil from the edges, and bake for another 25 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before slicing into 8 pieces and serving.
