Crustless Spinach Bacon Quiche

Instructions
- 1. Cook the bacon until crisp and chop it.
- 2. Preheat the oven to 350°F and grease a pie plate or 8x8 glass dish.
- 3. Thaw the spinach and squeeze out excess moisture. Slice or mince the onion and grate the cheese.
- 4. In a large bowl, mix all the ingredients with a hand mixer until combined.
- 5. Pour the mixture into the prepared pan and spread evenly.
- 6. Bake in the middle of the oven for about 40 minutes or until set.
- 7. Serve warm and refrigerate leftovers for up to a week or freeze for up to 3 months.
