Ingredients

The base

  • 6 large eggs
  • 16 ounces frozen spinach, thawed and squeezed dry
  • pound bacon, cooked and chopped
  • 2 ounces onion, thinly sliced or minced
  • ¾ cup heavy cream
  • 8 ounces Swiss or cheddar cheese, grated

Seasonings

  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • 1 pinch nutmeg
  • 1 teaspoon lemon zest (optional)

Instructions

  1. 1. Cook the bacon until crisp and chop it.
  2. 2. Preheat the oven to 350°F and grease a pie plate or 8x8 glass dish.
  3. 3. Thaw the spinach and squeeze out excess moisture. Slice or mince the onion and grate the cheese.
  4. 4. In a large bowl, mix all the ingredients with a hand mixer until combined.
  5. 5. Pour the mixture into the prepared pan and spread evenly.
  6. 6. Bake in the middle of the oven for about 40 minutes or until set.
  7. 7. Serve warm and refrigerate leftovers for up to a week or freeze for up to 3 months.
