Ingredients

  • 6 lg Eggs
  • 1 cup Half and Half
  • ½ tsp Kosher Salt
  • ¼ tsp Pepper
  • ½ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • 8 slices Cooked Thick Cut Bacon, chopped
  • 1 cup Frozen Chopped Spinach, thawed and water squeezed out
  • 1 cup Swiss Cheese, shredded

Instructions

  1. Prepare a 7" diameter metal pan with cooking spray and add 1 ½ cups of water to the inner pot of the Instant Pot.
  2. Beat the eggs in a mixing bowl and add the remaining ingredients, mixing well.
  3. Pour the mixture into the prepared pan without covering it.
  4. Place the pan on the trivet and lower it into the pot.
  5. Seal the Instant Pot lid and set to pressure cook for 25 minutes on high pressure.
  6. Once cooking is complete, perform a quick release of the pressure.
  7. Check if the center of the quiche is set; if jiggly, let it sit for a few minutes to firm up.
  8. Carefully remove the pan from the pot using silicone mitts.
  9. Absorb any excess liquid on the quiche with a paper towel.
  10. Invert the quiche onto a plate, slice, and serve.
