Instructions
- Prepare a 7" diameter metal pan with cooking spray and add 1 ½ cups of water to the inner pot of the Instant Pot.
- Beat the eggs in a mixing bowl and add the remaining ingredients, mixing well.
- Pour the mixture into the prepared pan without covering it.
- Place the pan on the trivet and lower it into the pot.
- Seal the Instant Pot lid and set to pressure cook for 25 minutes on high pressure.
- Once cooking is complete, perform a quick release of the pressure.
- Check if the center of the quiche is set; if jiggly, let it sit for a few minutes to firm up.
- Carefully remove the pan from the pot using silicone mitts.
- Absorb any excess liquid on the quiche with a paper towel.
- Invert the quiche onto a plate, slice, and serve.
