Ingredients

The base

  • 6 large eggs
  • ¾ cup heavy cream
  • 16 ounces frozen spinach
  • 2 ounces onion
  • 8 ounces Swiss or cheddar cheese

The seasoning

  • pound bacon
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • 1 pinch nutmeg
  • 1 teaspoon lemon zest

Instructions

  1. Cook the bacon until crisp and chop it.
  2. Preheat the oven to 350°F and grease a pie plate or 8x8 glass dish.
  3. Thaw the spinach and squeeze out excess moisture.
  4. Slice the onion thinly or mince it and grate the cheese.
  5. Mix all ingredients in a large bowl until combined.
  6. Pour the mixture into the prepared pan and spread evenly.
  7. Bake for about 40 minutes until set.
  8. Serve warm and store leftovers in the refrigerator or freeze.
