Healthy Spinach Bacon Quiche

Ingredients

Crust

  • 2 cups almond flour
  • 1 tbsp minced garlic
  • cup olive oil (or butter)
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 tbsp water

Quiche

  • 1 tbsp olive oil
  • 8 oz turkey bacon, diced small
  • 1 small red onion, diced small
  • 1 5 oz bag fresh spinach, roughly chopped
  • 6 large Eggland’s Best eggs
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1 cup cheese, divided
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. 1. Preheat the oven to 350°F and grease a 9-inch pie dish.
  2. 2. In a medium bowl, mix together all crust ingredients until a ball forms.
  3. 3. Press the crust into the pie dish evenly and bake for 15-20 minutes until slightly golden brown.
  4. 4. While the crust is baking, sauté the onions and turkey bacon in olive oil on medium-high heat.
  5. 5. Once cooked, add the spinach and cook until wilted, then let cool.
  6. 6. In a large bowl, whisk together the eggs, almond milk, ½ cup cheese, salt, and pepper.
  7. 7. Add the turkey bacon mixture to the egg mixture and pour into the slightly cooled crust.
  8. 8. Add the remaining cheese on top and bake for 35-40 minutes until set.
  9. 9. Let cool for 20 minutes before cutting.
