Easy Spinach Quiche

Instructions
- Preheat the oven to 400ºF.
- Unroll the pre-made pie crust and place it into a 9-inch pie pan, pinching the edges to hold its shape.
- Prick the bottom of the pie crust 5-7 times to avoid bubbling during baking.
- Bake the crust for 10 minutes, checking for bubbles and pricking them if necessary, then set aside.
- Heat olive oil in a skillet over medium/high heat, add onions and sprinkle with salt, sauté until translucent, then add garlic and sauté for an additional minute.
- Reduce heat to medium/low, add half the spinach and toss until wilted, then add the rest and sauté until there is no liquid in the pan, then remove from heat.
- In a bowl, whisk together eggs and milk, then add Greek yogurt and whisk until thickened, finally stir in 1 cup of gruyere cheese.
- Layer the quiche by sprinkling ½ cup of gruyere cheese on the crust, spreading the spinach mixture over it, and pouring the egg mixture on top.
- Bake for 20 minutes, then check the crust; cover edges with foil if browning and bake for an additional 20-25 minutes until fully cooked.
- Let the quiche rest for 5-10 minutes before slicing and serving.
