Spinach Quiche

Ingredients

The crust

  • 1 recipe Easy Pie Crust

The filling

  • 5 ounces fresh spinach
  • 6 large eggs
  • ½ cup milk
  • 1 cup crumbled feta or goat cheese
  • 1 cup chopped green onions
  • ¼ teaspoon sea salt
  • to taste freshly ground black pepper

Instructions

  1. Prepare the pie crust and refrigerate it while preheating the oven to 425°F.
  2. Blind bake the crust for 15 minutes, then remove weights and bake for an additional 5 to 8 minutes.
  3. Reduce the oven temperature to 350°F.
  4. Steam the spinach until wilted, then wring out excess water.
  5. In a bowl, whisk together the eggs and milk, then mix in the spinach, cheese, green onions, salt, and pepper.
  6. Pour the filling into the par-baked crust and smooth it out.
  7. Bake the quiche for 40 to 50 minutes until the eggs are just set.
  8. Allow to cool for 10 minutes before slicing and serving.
