Spinach Quiche

Instructions
- Prepare the pie crust and refrigerate it while preheating the oven to 425°F.
- Blind bake the crust for 15 minutes, then remove weights and bake for an additional 5 to 8 minutes.
- Reduce the oven temperature to 350°F.
- Steam the spinach until wilted, then wring out excess water.
- In a bowl, whisk together the eggs and milk, then mix in the spinach, cheese, green onions, salt, and pepper.
- Pour the filling into the par-baked crust and smooth it out.
- Bake the quiche for 40 to 50 minutes until the eggs are just set.
- Allow to cool for 10 minutes before slicing and serving.
