Instructions
- 1. Preheat the oven to 350°F and lightly mist a 9-inch pie plate with cooking spray.
- 2. Heat olive oil in a skillet over medium heat, add chopped onion, and cook until softened and golden.
- 3. In a mixing bowl, beat the eggs and then add cooked onions, cottage cheese, Feta, salt, pepper, red pepper flakes, and spinach, stirring to combine.
- 4. Transfer the mixture to the prepared pie plate, ensuring even distribution.
- 5. Bake for 35-45 minutes until the middle is set and the edges are golden.
