Ingredients

The base

  • 5 large eggs
  • 1 cup 1% low fat cottage cheese
  • 2 oz crumbled Feta cheese
  • 10 oz frozen chopped spinach

The seasoning

  • 1 teaspoon olive oil
  • 1 small onion, chopped
  • ¼ teaspoon salt
  • teaspoon black pepper
  • teaspoon crushed red pepper flakes

Instructions

  1. 1. Preheat the oven to 350°F and lightly mist a 9-inch pie plate with cooking spray.
  2. 2. Heat olive oil in a skillet over medium heat, add chopped onion, and cook until softened and golden.
  3. 3. In a mixing bowl, beat the eggs and then add cooked onions, cottage cheese, Feta, salt, pepper, red pepper flakes, and spinach, stirring to combine.
  4. 4. Transfer the mixture to the prepared pie plate, ensuring even distribution.
  5. 5. Bake for 35-45 minutes until the middle is set and the edges are golden.
  6. 6. Cut into 6 slices and serve.
