Easy Crustless Spinach and Feta Pie

Ingredients

The filling

  • 10 oz frozen spinach, thawed and liquid squeezed out
  • ½ cup scallions, chopped
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley
  • ½ cup reduced fat crumbled Feta
  • 2 tbsp grated Asiago cheese, or Parmesan, Romano

The batter

  • ½ cup white whole wheat flour
  • 1 tsp baking powder
  • cup fat free milk
  • 1 tsp olive oil
  • 2 large eggs, beaten
  • ½ tsp kosher salt
  • to taste fresh cracked pepper
  • as needed cooking spray

Instructions

  1. Preheat the oven to 400°F.
  2. Lightly spray a pie dish with cooking spray.
  3. In a bowl, mix together the spinach, scallions, dill, parsley, and feta cheese, then spoon this mixture into the pie dish.
  4. In another bowl, sift together the flour and baking powder.
  5. Add the remaining ingredients to the flour mixture and blend well.
  6. Pour the batter into the pie dish over the spinach mixture.
  7. Bake for 28 to 33 minutes or until a knife inserted in the center comes out clean.
  8. Let it stand for at least 5 minutes before serving, then cut into 6 slices.
