Spinach Feta Quiche

Ingredients

The crust

  • 1 9" frozen pie crust, regular not deep-dish

The filling

  • 2 teaspoons olive oil
  • 2 cups chopped fresh spinach
  • 2 oz shredded 2% milk Mozzarella cheese
  • 2 oz crumbled Feta cheese
  • 4 large eggs
  • ¾ cup skim milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with aluminum foil.
  2. Place the frozen pie crust on the baking sheet and cover the edges with aluminum foil.
  3. Heat olive oil in a skillet over medium heat, add spinach, and sauté until wilted.
  4. Remove spinach from heat and squeeze out excess liquid.
  5. Layer shredded Mozzarella cheese in the pie crust, followed by the wilted spinach and crumbled Feta cheese.
  6. In a bowl, whisk together eggs, skim milk, salt, and pepper, then pour over the filling in the crust.
  7. Bake at 425°F for 15 minutes, then reduce the heat to 350°F, remove the foil, and bake for an additional 25 minutes.
  8. Let cool for a few minutes before slicing into 8 pieces and serving.
