Spinach Feta Quiche

Instructions
- Preheat the oven to 425°F and prepare a baking sheet with aluminum foil.
- Place the frozen pie crust on the baking sheet and cover the edges with aluminum foil.
- Heat olive oil in a skillet over medium heat, add spinach, and sauté until wilted.
- Remove spinach from heat and squeeze out excess liquid.
- Layer shredded Mozzarella cheese in the pie crust, followed by the wilted spinach and crumbled Feta cheese.
- In a bowl, whisk together eggs, skim milk, salt, and pepper, then pour over the filling in the crust.
- Bake at 425°F for 15 minutes, then reduce the heat to 350°F, remove the foil, and bake for an additional 25 minutes.
- Let cool for a few minutes before slicing into 8 pieces and serving.
