Ingredients

The crust

  • cup Almond flour
  • ½ tsp Sea salt
  • ¼ cup Coconut oil
  • 1 large Egg

The filling

  • 1 lb Frozen spinach
  • 8 oz Feta cheese
  • 4 oz Cream cheese
  • 2 oz Mozzarella cheese
  • 4 cloves Garlic
  • 1 tbsp Fresh dill
  • 4 large Egg

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a pie pan with parchment paper.
  2. In a bowl, mix almond flour and sea salt, then add melted coconut oil and beaten egg until combined.
  3. Press the dough into the bottom of the pan and bake for 10-12 minutes until lightly golden.
  4. In another bowl, combine all filling ingredients, adding the eggs last, and transfer to the crust.
  5. Bake for 30-40 minutes until the center is firm.
