Instructions
- Thaw the puff pastry and spinach ahead of time.
- Preheat the oven to 375°F.
- Dice the onion and mince the garlic, then sauté them in olive oil until soft.
- Let the sautéed onion and garlic cool slightly.
- In a bowl, combine cottage cheese, Parmesan, nutmeg, salt, pepper, and two eggs.
- Squeeze excess water from the thawed spinach and add it along with the sautéed onion and garlic to the cheese mixture.
- Roll out the thawed puff pastry to about 10x10 inches.
- Place the rolled pastry in a pie plate and fill it with the spinach and cheese mixture.
- Fold the corners of the pastry toward the center, leaving some filling exposed.
- Brush the top with the remaining whisked egg.
- Bake for about 45 minutes until the pastry is golden brown.
- Let it sit for five minutes before slicing and serving.
