Spinach Pie

Ingredients

  • 1 sheet puff pastry
  • 1 lb frozen chopped spinach
  • 1 medium yellow onion
  • 1 clove garlic
  • 1 Tbsp olive oil
  • 1 cup cottage cheese
  • ¼ cup grated Parmesan
  • tsp nutmeg
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 large eggs

Instructions

  1. Thaw the puff pastry and spinach ahead of time.
  2. Preheat the oven to 375°F.
  3. Dice the onion and mince the garlic, then sauté them in olive oil until soft.
  4. Let the sautéed onion and garlic cool slightly.
  5. In a bowl, combine cottage cheese, Parmesan, nutmeg, salt, pepper, and two eggs.
  6. Squeeze excess water from the thawed spinach and add it along with the sautéed onion and garlic to the cheese mixture.
  7. Roll out the thawed puff pastry to about 10x10 inches.
  8. Place the rolled pastry in a pie plate and fill it with the spinach and cheese mixture.
  9. Fold the corners of the pastry toward the center, leaving some filling exposed.
  10. Brush the top with the remaining whisked egg.
  11. Bake for about 45 minutes until the pastry is golden brown.
  12. Let it sit for five minutes before slicing and serving.
